Slow cookers are great! I'm not a vegan, but I do love vegetable dishes and this has plenty. Lots of photos.

I have made several recipes from this book and been very pleased with the results. I love making granola in the crock pot, but a word of warning: you do have to stir every 10 minutes and i felt mine was done at about 2.5 hours instead of 3-4.

It's really nice that Kathy Hester has a slow cooker and is a vegan, but that doesn't mean that everything you cook has to be done in the slow cooker.

For example: slow cooker lattes! Why not make the espresso, add some almond milk, and then let it stew for hours in the slow cooker with some spices?! Is she kidding? A latte takes 5 minutes to make, and as anyone who drinks coffee knows, you don't want espresso that's been sitting around more than 10 minutes as it gets bitter.

The point of a slow cooker is not to drag out a 5-to-15 minute recipe into something that takes hours but to make something that does take a long time easier by removing the necessity of watching over it. in most cases, those would be meat dishes, like a pulled pork or another tough cut made tender by hours on low heat. I was interested to see what kind of luscious vegetable ragouts a vegan slow-cooker book might have. Well, they're not in this vegan cookbook.

Things like the peanut fondue she suggests, a lots of these sauces, stews, and soups just need to be heated through. They do not need hours and hours in the slow cooker. Save your time and money and wait for a properly trained chef to produce a slow-cooker book for vegans. This book is just a lot of non-slow-cooker recipes unnecessarily slowed down. Unless you just don't have any recipe ideas, don't bother. Or, make this book useful by making the recipes on the stoveftop. Most of them won't take long.

I've just been browsing the recipes in this book and I already LOVE it! The recipes are clear and concise, with gluten-free and soy-free labels. The auther offers conversions, storage, tips and other ideas.

As a busy Mom to three children, this book will be essential. The slow cooker saves so much time, these recipes are very quick, easy and best of all CHEAP. This is definately going on my must buy list. I will be renewing it again and again in the meantime.

For the lazy cook, there are at least 2 recipes that take 5-10 minutes of preparation (vegetable soup and creamed potato soup), which I tried. With the vegetable soup recipe which I have done twice, I found that using a wide range of frozen vegetables (peas, corn, carrot, onion, broccoli, cauliflower, kale, and okra) made it taste better. The other recipes involved more prep work such as frying onions, so I did not attempt them.
